I love….

I love finding good quality brands that I know will provide yumminess in my tummy :).  After thinking about it all night, here are some of the most satisfying…in no particular order.

1.  Kashi

The morning is made brighter and healthier when I start it off with a big bowl of Kashi + some chocolate chips!  I also think that their granola bars rock.

2.  Cabot

Hands down, Cabot is the my favorite producer of sour cream and cheese.  Period.  I love that their company is a co-op and that I am directly supporting many farmers when I purchase these products.  Oh, and Cabot cheese makes great gifts!  I sent some sharp cheddar to my brother last year, and he is hooked!

3.  Terra Chips

Sometimes a girl’s gotta eat chips.  Forget Lays.  Eating red, blue, orange, and purple chips is much more satisfying.  My faves:  “Sweets and Beets” and “Potpourri”.

4.  Stonyfield

Frozen yogurt at it’s best.  Organic, creamy, low-fat!  You’ve gotta try the “After Dark Chocolate”!

5.  Arm & Hammer

I couldn’t resist.  Really.  I know this is a food and fitness blog, but we all have to smell good, right?!  I like Arm & Hammer detergents because they are affordable, and they make my clothes smell so pleasant, particularly this kind.  🙂

Knees, Yoga, Leftovers, Book.

Welcome to my most random post to date.  🙂  Hope you enjoy.

First the knees.  The doctor diagnosed me with bilateral chondromalacia patella.  Basically, the cartilage under my knee cap is torn and soft, thus causing pain while running.  There are several options for this, the most successful being surgery that entails shaving the torn cartilage off.  Oftentimes, however, physical therapy can help strengthen the quads, thus prolonging the need for surgery.

After some thought and talks with the hubby, I have decided to try to increase my quadriceps on my own through yoga, some specific quad exercises, and by use of my elliptical.  Thus, I will put running on the back-burner until spring.

This, of course, was a perfect excuse for me to buy a yoga video!  I found a great one on myyogaonline.com.  I highly recommend this site!  They have a great selection, and I was able to find a video that focused on strengthening the legs and lengthening the hamstrings.  Find it here.

For lunch I had some yummy leftovers (again!).  I am finding out that it takes a while for a single person to polish off leftovers.  Unfortunately, I don’t think I can stand another bite of this corn casserole!

Finally, my dear friends, I want to leave you with a picture of a book.  This is not just any book, this is an epic book!  It’s literally been years since I have wanted to stay up late just to read a few more pages that then turns into 50!  Stay tuned for a review of it later this week.  And start saving $12 so you can go to Barnes & Noble to buy yourself a copy.

Backyard Visitor.

Hi everyone!

Today was a great day.  I love it when Tuesdays are my Mondays :).

Lunch two slices of this soft and cheesy veggie pizza.  I could eat pizza everyday.

My craving this week is oranges.  I saw them in the grocery store yesterday and had to hold myself back from peeling and eating them right then and there!  Maybe I’m low on Vitamin C? I enjoyed a juicy one for an afternoon snack.

While the orange was great, the highlight of the day was seeing a moose in my backyard.  Not this Moose:

Pretty cool huh?!  It’s not everyday that a girl sees a moose in her backyard! 🙂

Corn Casserole.

Since the hubs is leaving today to go to Mass all week, I decided that he needed one good ‘n hearty, last home-cooked meal before he lives off of fast food for the week.  (I may be a tad bit jealous…seriously!).

After a quick browse of some popular blogs, I decided to make Caitlin’s Pumped-Up Corn Casserole, however, to make it extra appealing to the husband, I added cheese :).

The yummy ingredients include whole kernel corn, cream corn, tofu, corn bread mix, sour cream and cheese.  Btw, Caitlin’s recipe calls for broccoli, however, I totally forgot the broccoli when at the grocery store.  So no broccoli it is.

This recipe is easy.  I love easy.  All you do is mix all the ingredients together and pour in a greased baking dish!

Three great things about this recipe:  easy, cheap, hearty.  Can’t beat it.

Corn Casserole

Adapted from Caitlin’s Pumped-Up Corn Casserole

  • 1 box corn muffin mix (I used a box of the cheap Jiffy brand)
  • 1 can of creamed corn
  • 1 can of whole kernel corn
  • 1 cup of sour cream (I used Cabot Reduced Fat=local and yum)
  • 1/2 block of extra firm tofu, cubed
  • 1 cup of cheese (I used mild cheddar, but sharp cheddar would be good too!)

Mix it all together.  Put it in a greased baking dish.  Bake at 350 for about 45 min.  Viola!

An Eventful Weekend.

Hello friends.  Sorry for the delay in posts.  I have had quite a weekend!  We went camping again in Vermont.

We left Thursday, and things were great until Friday. Let me re-cap.  I started out the morning with a walk and saw this pretty waterfall:

Then I came back to campsite and relaxed.

That afternoon, my husband decided to go hunting.  I think I’ve written before about how one of his favorite hobbies is hunting.  Specifically, he hunts white-tailed deer.  Being from the South, he grew up hunting with his dad and brother.  Anyway, he left at about 4pm.  I stayed in the tent and starting reading a new book.  At 5pm, my phone rang and it was my husband.  He was extremely disoriented and was mumbling so bad, I could hardly understand a word he said.  When he became more coherent, he said that he had fallen 15′ out of his tree-stand when the cable holding it broke.  I immediately went into panic mode.  It was crazy how uncomposed I was…..

He was able to walk back to his truck and drive to the campsite.  I quickly drove him to Dartmouth Hospital where he underwent many x-rays and cat scans.  He was in extreme pain!

It’s with a thankful heart that I can report he only broke one small bone in his back-and it would heal naturally!  He was so very lucky.  This is me in the hospital after finding out he was going to OK.

I love him so very much.  🙂

He wanted to stay through the weekend, although I was a bit apprehensive about him sleeping in a tent with a broken bone!  But, he toughed it out, and we had a great day yesterday.  Of course, he was very sore all over his body and had to take it very easy. I grilled us some spinach and cheese sandwiches along with some parsnips.

This was the first time we had each had parsnips.  And, we don’t like them!  They had a weird spice taste to me.  Almost like a horseradish kick.

We also saw this hot-air balloon floating over the gorge.  The vibrant colors were breathtaking.  It made me feel so happy inside!

It’s nice to be back in my comfortable home now, although camping was fun.  Moose is dead to the world on his bed :).  I’m so happy and feel blessed that the hubs didn’t suffer any extensive injuries.  Don’t worry, he will always have on a safety system from now on!  Well, I’ve got to go check on him and make sure he isn’t overdoing it :).

The Big Day.

Today is the day I go to the orthopedic doctor!  I’ve been anxiously awaiting this appointment, because I want to check with him and make sure it is okay for me to be running.  You see, I played volleyball for four years in high school and the combination of that plus a predisposition to bad knees (my dad just had a knee replacement….ouch!) has me concerned that running may not be the best thing for me. 

Let me take you back ten years.  Okay, wow, I was 19.  During this time I was a freshman at the University of Georgia and my knees ached all the time!  It was an almost tearful event to walk up a flight of stairs :(.  I went to the doctor who told me:

  • My hamstrings are naturally too short for my legs.
  • I have patellar tendonitis in both knees.
  • I vaguely remember him saying something about my plica.
  • He recommended orthoscopic surgery on my right knee. 

He referred me to physical therapy, which I attended for 6 months.  It kinda helped, but after this time in my life I became pretty sedentary so the knee pain greatly subsided. 

But now it’s back!  I’ve managed to run up to 3 miles, and I’m motivated to do more than that!  However, I want to make sure that I’m not destroying my knee in the process.

My appointment is at 3:30, and I’ve done a lot of research and feel I’ve found a great doctor!  He’s actually a runner himself and loves watersports too.  Wish me luck!

A Nice Walk.

Yesterday afternoon, I started out on a run.

However, it was much too pretty to run, so after about 1.5 miles I started walking and taking pictures.

It was nice to start walking briskly and really take in all of the fall colors.

I came home and made some fries and squash for dinner and also enjoyed leftovers of the lemon orzo salad.

I think I’ve said this before, but I really must recreate this salad.

In it was:

  • orzo
  • sun-dried tomatoes
  • spinach
  • feta cheese
  • garlic
  • some sort of lemon/olive oil dressing

Mmmmm, so tasty!

This morning I am starting the day with a big bowl of cereal.  I have a longggg day ahead of me!  Hope you all have a great Tuesday 🙂

My Own Bed.

I am finally back home!  Usually I’m the type of person that does not want to come home on the dreaded day that I am planned to pack up and start driving/flying.  However, I was so totally ready to be back to my own little house today it wasn’t even funny.  So, let me backtrack to Saturday morning:

1.  After my healthy breakfast of granola + raspberries the husband surprised me with coffee and a Boston Creme donut.  (He sometimes has memory lapses about my healthy eating habits.  I can forgive him though! lol)

This was not just your ordinary coffee folks.  This was New England Pumpkin Spice Coffee.  Let me just say it’s way better than a Starbucks Pumpkin Latte 😉

2.  After the donut settled, I ran for 29 minutes and walked for about 10.  Yay!

3.  Freshly showered, I go to get online and guess what?  My broadband USB card is not working=no internet :(.  This made for a longgg day.

4.  I had possibly the worst sleep ever last night.  Somehow I strained my neck in my sleep, my dog wouldn’t stop whimpering/barking, and it was about 35 degrees.

5.  This morning I awoke ready to high-tail it back to NH.  But first, a stop at Verizon Wireless for a new broadband card ran me about $75.

I was so ready to be home, and I am so ready to be in my bed right about now!

It was so cold last night that we opted to not cook over the campfire and went out instead.  I enjoyed some rotisserie chicken and a lemon orzo salad that I must try to recreate….it was so yum!  Today, since I was so completely exhausted, I did not make the most healthy food choices.  A late morning stop at Panera landed me the broccoli and cheddar soup bowl + a sugar cookie.  Dinner was some quick sweet potato fries.  And now my dear friends, I must say goodnight before my eyelids close!  Hoping for a better camping experience next weekend 🙂

We’re here.

Good morning!  Today is a beautiful day in Vermont!

Yesterday on the ride here I snacked on a Cliff Bar:

It was a new flavor, White Chocolate Macadamia Nut, that I have heard other bloggers rave about.  It was pretty good, but Chocolate Brownie is still my fave :).

As I sit here it is so cute to watch Moose outside the tent.  He is just in awe of all the chipmunks and squirrels that are playing with each other no less than 10 feet from him!  I’m so glad he isn’t chasing them.

Oh and here is a picture of me this morning…I am brave! LOL

Since it was absolutely monsooning yesterday, a campfire was out of the question.  We ended up going to Pizza Hut where I enjoyed 2 slices veggie lovers.  I heart pizza.

This morning I am snacking on Planters Trail Mix in the Berry Almond Daybread Blend and it is really good!  I also picked up a pint of raspberries.  Mmmmmm!
