The Last of the Pumpkin Muffins.

Monday.  Always a bummer-day in my world!  What can i say, I’m the kinda girl that lives for the weekends :).  And, this weekend I’m going camping in Vermont.  I’m really excited about trying some camp-fire recipes.  Do you know of any good ones?

After work, I was very excited and motivated to run.  Pre-run snack:

Half of the last pumpkin muffin+smidgen of peanut butter+sprinkle of oatmeal.  Perfect!  And, of course, the other half was my post-run snack.  These were so good, I must make them again soon. Click here for the recipe.

My run went well!  I felt great and accomplished 3 miles in 32:32.  It’s amazing to see my timing getting better and better.

Dinner hit the spot!  It included cheese and garlic gourmet sausages and roasted brussels sprouts.

I love eating wholesome vegetables that are tasty!  These are so easy to roast.  Drizzle some olive oil, salt+pepper, and bake at 400 degrees!  Easy peasy lemon squeezy :).

4 more days til the weekend!  can’t wait! 🙂

About journeytobodyzen

Hi! I a girl approaching the big 3-0 who is on a search to find zen for my body. Being busy all the time (full time job, full time grad student, and juggling an internship!) I have limited time to exercise and even less time to prepare nutritional meals. However, I figure a blog will keep me accountable and help me to make some much needed changes in my life! I hope I can bring some tips to help other busy folks as well. Enjoy!

Have fun camping. Where in Vermont are you going? I went to college in Burlington.

  2. those look so great- I had never seen a “real” (unfrozen) brussel sprout til this post! hehe

I’ve always wanted to try roasted brussel sprouts, but everyone I talk to says they HATE them, so I’ve been too timid to try them. I’d love to know what you come up with for camping recipes. I’m always on the lookout for something other than hot dogs! 😉
    Have fun!
