Anniversary Fun

Tomorrow is our 2nd Anniversary! We celebrated today because tomorrow we both work and I have class tomorrow night. Here are some highlights of my day…

First:  I ran 2 miles with no problems! Yayyyyyyyyy!

Second: We went out for lunch at Canoe in Center Harbor, NH.

It was our first time there.  My crab cakes were amazing!

Third:  I made these easy, light chocolate chip cookies with whole wheat flour and ground oatmeal.  They are melt-in-your-mouth good.  Trust me, you need to make these asap!

Now for some relaxing and watching one of my favorite shows, “I Survived”.

Bev’s Chocolate Chip Cookies

Makes 2 1/2 dozen

Ingredients

  • 3/4 cup rolled oats
  • 1 cup whole-wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup butter, softened
  • 1/4 cup canola oil
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Preparation

  1. Preheat oven to 350°F. Coat 2 baking sheets with cooking spray.
  2. Grind oats in a blender or food processor. Transfer to a medium bowl and stir in flour, baking soda and salt. Beat butter in a large bowl with an electric mixer until fluffy. Add oil, granulated sugar, brown sugar, egg and vanilla; beat until smooth and creamy. With the mixer running, add the dry ingredients, beating on low speed until just combined. Stir in chocolate chips.
  3. Drop the dough by heaping teaspoonfuls, at least 1 inch apart, onto the prepared baking sheets. Bake cookies, 1 sheet at a time, until firm around the edges and golden on top, about 15 minutes. Cool the cookies for 2 minutes on the baking sheets, then transfer to wire racks to cool completely.

    I am curious about your favorite show, “I survived”.

    Given my intense fear of wild animals (or just evil domestic ones), my mind goes instantly to that other show, “I was bitten” (or whatever it’s called), in which people describe how they escaped from animal attacks.

    That’s the stuff of nightmares, if you ask me.
    I sure hope your favorite show its less terrifying.

  2. I Survived is probably more terrifying! It’s basically survival stories from people who have experienced all sorts of scariness such as being stuck in a blizzard, being shot, falling off a roof, etc. I love it! Oddly enough, I also love the crime shows. Not the CSI’s and NCIS’s but the Datelines and 20/20’s and Snapped and all those. I’m just weird like that! 🙂
