Stuffed Squash=Yum!

Friday night I made stuffed squash.  This is a revised recipe from my mother-in-law (revised, because being a classic Southern woman she adds wayyyyyy more butter and cheese!).  This recipe was made for my husband and I.   Keep in mind my husband eats A LOT.  This recipe could easily serve 4 people, just not in my case :).  Start with the squash:

Add them whole into boiling water.  Timing may vary.  I boiled mine for 6 minutes. You do not want to overcook them…if they become too soft they will fall apart! Basically, as soon as a knife will go through them I take them out.

Next, cut them in half and scoop out the middle. Put the middles into a bowl to use in a few minutes for the stuffing.

Once you have scooped out all the squash, lay the squash shells in a glass baking dish.  Now back to the stuffing….These are the ingredients that will be added to the bowl.

1 egg

3/4 cup cheese (i love sharp white cheddar)

3 TBSP of butter

salt and pepper

Mix the above into the squash middles.

It will look like this

….(sorry about the poor picture quality…camera was on wrong setting!).  Now pour this mixture into the squash shells, then bake at 350 degrees for about 10-15 minutes!

Final product

I overfilled one of them and it leaked :).  Super yum, super easy!

Stuffed Squash

Serves 4


4 squash

1 egg

3/4 cup cheddar cheese

3 TBSP butter

salt and pepper

Boil whole squash for approximately 6-8 minutes, or until a knife just is able to go in them.  Remove from heat.  Cut the squash in half and remove the insides, placing the squash middles in a bowl.  Lay the squash shells into a glass dish.  For the stuffing, add the egg, cheese, butter and salt and pepper to the squash middles. Stir.  Place mixture into squash shells.  Bake at 350 degrees for 10-15 minutes or until mixture is firm.
